Circus Animal Marshmallow Squares

One of my favorite things as a kid and honestly still is are marshmallow crispy treats. They’re just the perfect combination of gooey marshmallows and crispy rice cereal. I also loved circus animal cookies, I mean cookies covered in pink and white sugariness then sprinkles! So I decided to try putting two loves together and it was like a beautiful sugar baby! Warning this is definitely sugar high territory!

First we’re going to prep a few things to make it easier once everything starts to come together. Line an 8*8 square pan with foil and spray with nonstick spray then set aside. Next if you want break or cut animal cookies in half do that now or just leave them whole which ever you prefer.

Now we are going to melt the butter in a large pot, you’ll need the room once you add the cereal. Once it’s melted add the vanilla and marshmallows and stir until everything is melty.

Next add the cereal and stir until everything is gooey and marshmallowy. While it’s still hot add the circus animal cookies and stir just until incorporated. If you stir too much you’ll have pink streaked marshmallow squares which still taste the same so if you want that go for it!

Once everything is mixed pour in your pan pressing with the back of the spoon or spatula to even it out. If you spray your hands with nonstick spray that works really well to get the job done!

Let cool at room temp for about 30 min before cutting into squares, honestly I usually can’t wait that long but I also like them a little warm anyway.

  1. Line an 8*8 pan with foil and coat with non stick spray. If you want cut up animal cookies into smaller pieces.
  2. In a large pot melt butter then add vanilla.
  3. Add marshmallows and stir until melted.
  4. Add rice cereal and stir until incorporated then add circus animal cookies and stir until just combined.
  5. Pour into prepared pan and lightly press with spatula, spoon, or hands sprayed with non stick spray.
  6. Allow to cool, remove from pan and peel of foil then cut into squares.
